The combination of roasted squash and ham is just delicious.
Use gammon steaks instead of roasting a ham joint if you're cooking for just 1 or 2, or don't have as much time.
Served up with some roasted garlic broccoli and cauliflower.
What you'll need
Enough for however many you're feeding, I cook for 2.
Main ingredients
- Gammon/ ham
- Butternut squash
Fresh/ frozen
- Broccoli
- Cauliflower

- Chilli flakes, optional
- Olive oil
- Salt & pepper
What to do
- Cook the gammon to your liking, I usually cook a small joint (180 fan, about 30-40mins) but you could pan fry or grill some gammon steaks instead.
- Slice the squash lengthways and remove the seeds. Cook on the middle shelf with a drizzle of olive oil, salt & pepper and a sprinkling of chilli flakes until nice and soft, takes about 30 minutes, 180 fan.
- When they're both cooked it's time to plate up - serve with a side or 2 of your favourite greens...
