Choose a chicken & a veggie skewer, add a side of crunchy slaw.
What you'll need for the skewers
Enough for however many you're feeding, I cook for 2.
For the herby lemon chicken skewers
- Chicken breasts or thighs
- 2-3 tbsp olive oil
- Juice of a lemon
- 1 tsp fresh or dried thyme or oregano
- Salt & pepper
For the chilli, garlic and sesame chicken skewers
- Chicken breasts or thighs
- 4 cloves of garlic, grated or minced
- 2 tsp of (crispy) chilli oil
- 1 tbsp sesame oil
- 3 tbsp light soy sauce
- Juice of a lime
- 2-3 tbsp (toasted) sesame seeds
- Salt & pepper
For the halloumi & veggie skewers
- Halloumi
- Courgettes
- Red onion
- Peppers
- Mushrooms
- Tomatoes
- Olive oil
- Salt & pepper
For the veggie skewers
- Courgettes
- Red onion

What to do
1. Prep the chicken and veggies
Cube and cut the chicken and vegetables into chunky pieces (see image below for reference). In a bowl, mix together the other 'marinade/ dressing' ingredients. Leave to marinate while you make the slaw.
2. Make the slaw, ingredients below
In a small bowl make the dressing by mixing together the sesame oil, soy sauce, lime juice and sesame seeds. Prep the raw ingredients and add to a bowl, pour over the dressing so everything's well coated. Done!
- 1 carrot, grated
- ¼ red or white cabbage, thinly sliced
- 1 or 2 spring onions, thinly sliced
- 1 tbsp sesame oil
- 1 tbsp light soy sauce
- Juice of a lime
- 1 or 2 tbsp sesame seeds
3. Make the skewers
Thread the raw ingredients onto the skewers and cook. Cooking times will vary depending on how you cook them. I rely on the food thermometer for this.

notes & tips
- 75 degrees is the temperature at which chicken is cooked. Insert a food thermometer into the thickest part of the meat. If it's at 75 degrees it can come off the heat, and left to rest if needed.
- subs no chicken? Or fancy something else? Try pork or beef. No skewers? Keep the chicken whole or cut into strips and grill or pan fry as normal - you'll still get all the flavour!
