Brussels Sprouts & Bacon

Recipe spoiler alert! This is possibly the best way to prepare Brussels sprouts. Enjoy as a side dish to your favourite choice of protein...

Make this vegan by swapping the bacon for chestnuts.

 

What you'll need

Enough for however many you're feeding, I cook for 2.

Fresh ingredients

  • Sprouts
  • Bacon

Store cupboard

  • Olive oil, 1-2 tbsp
  • Salt & pepper

 

What to do

  1. Toss the sprouts in some olive oil and salt & pepper, spread them on a baking tray.
  2. Finely slice some rashers of bacon (I had a half pack of cubed pancetta that needed using up) and sprinkle on top.
  3. Bake for around 35-40 mins at 200 degrees, mix them up half way through for maximum crispiness!

Notes & tips

prep sprouts trim the stalky bottom bit off and remove any yellowy leaves. Cut them in half from top to bottom before tossing in olive oil.

vegan you can make this recipe vegan by swapping the bacon for roughly chopped roast chestnuts or hazelnuts!
