A super easy and festive side dish that can be enjoyed all through the wintertime. It can dress up cold cuts and leftovers, as well as being enjoyed as a side dish on Christmas day.
I don't add sugar to my recipe, so it's quite tart, which suits me but, if your way of eating allows you could add a handful of raisins, a spoonful of sugar/ honey or maple syrup.
Double up this recipe to eat half tonight with your choice of protein and a side of greens - sprouts would be nice! Allow the other half to cool down so you can freeze it in preparation for Christmas or boxing day lunch.
What you'll need
Half a red cabbage yields about 4-6 portions.
Fresh ingredients
- Half a large red cabbage, finely sliced
Everyday basics
- Medium onion, finely chopped
- Juice of an orange
- 1 apple, chopped or grated
- Red wine vinegar, 2 tbsps
- Red wine, 2 tbsps
- Salt & pepper
Spices
- Pinch of ground cloves, optional
- Cinnamon stick, or ¼ tsp ground
- Grated nutmeg, ¼ tsp
What to do
- Put all ingredients into the pan, season with salt and pepper and mix well.
- Cover the pan and over a low to medium heat cook for about 60 mins, stirring every 20-30 minutes, until everything is cooked through. If you have the time, cook on a low heat for 90 mins.
