This is our go-to pancake recipe as it just requires 3 simple store cupboard ingredients you will always have at home, plus 40g of your favourite Purition.
Ingredients
- 40g Purition Chocolate (any flavour would work)
- 40g any flour
- 1 tsp baking powder
- 150ml your preferred milk
Optional toppings
- We topped ours with homemade berry 'jam' - add a handful of frozen berries and a tbsp of chia seeds to a pot and simmer on low heat until it reaches the right consistency stirring occasionally (about 10 mins)
- A good dollop of plain Greek yoghurt
- Toasted flaked almonds
Method
- Mix all the ingredients together until smooth. Leave the batter to rest for 5 minutes
- Heat 1 tsp of coconut oil, or butter in a frying pan on a medium heat
- Add 2-3 tbsp of batter to the pan and cook until golden on both sides
- When bubbles start to appear on the surface, it’s time to flip it over!
- Repeat until you've run out of batter. You should be able to make 4–5 medium pancakes
Tips & swaps
- Toppings? We topped ours with some homemade berry 'jam' but you can use whatever you fancy - yoghurt, maple syrup, toasted flaked almonds, etc.
- No Chocolate Purition? Try it with any other chocolate-y flavour like Chocolate & Hazelnut or Chocolate Orange
- Gluten-free? Swap the flour out for your gluten-free choice, try coconut or almond flour
- Want an extra protein boost? Add a tbsp of Plain Proteins powder
